Easy Fruit Pizza

This is one of my all-time favorite fruit desserts. The sugar cookie crust topped with the cream cheese frosting and fresh fruit is absolute perfection. It’s tastes likes a mix between a fruit tart and a sugar cookie bar and is so, so delicious!

We LOVE fruit pizza around here! I mean, is anything better than a cookie pizza?? I don’t think so! While I love a warm chocolate chip cookie pizza, I have to say that fruit pizza is my absolute favorite. It’s the perfect dessert for long summer days and is SO yummy!

You can use a homemade recipe for the dough, but I’ve found the premade dough is easy and tastes great. My kind of recipe! ;) There’s so many different ways to make this dessert unique. Just add your favorite fruits and designs to make it perfect for your family!

Fruit Pizza Recipe Ingredients

  • Sure cookie dough: I prefer to keep things easy so I used premade Pillsbury sugar cookie dough, but any store bought dough works. You can also use your favorite homemade sugar cookie recipe.
  • Frosting: Softened cream cheese, Cool Whip, vanilla extract and granulated sugar.
  • Fresh fruit: I used a combination of berries including strawberries, raspberries and blueberries, mandarin oranges, kiwi and pineapple.

Favorite Fruit for Topping

You can use any type of fruit for this recipe! If you opt to use canned fruit be sure to drain it fully in a strainer and pat dry with a paper towel so as not to add excess moisture which could lead to a soggy crust. Below are some of my favorites:

  • Strawberries
  • Kiwi
  • Mandarin oranges
  • Raspberries
  • Blueberries
  • Blackberries
  • Bananas
  • Mangoes
  • Grapes
  • Pineapple
  • Peaches or peach pie filling

Homemade or Store-Bought Sugar Cookie Dough Crust?

This is totally up to you! I typically use premade Pillsbury sugar cookie dough because it’s super easy and convenient, but you could definitely make your own soft sugar cookie. It will just take a little bit longer to make your sugar cookie base, but taste oh so delicious! You could even make a graham cracker crust if preferred.

How to Make Fruit Pizza

The best dessert pizza with fruit is easy and effortless to make all while letting the beauty of fresh fruit shine through!

  • Prep fruit: Slice or drain the fruit and set on paper towels to absorb excess juices.
  • Make cream cheese icing: In a large mixer bowl, whip together the softened cream cheese, sugar, and vanilla. Fold in cool whip. Chill until ready to use.
  • Sugar cookie crust: Lightly grease a round pizza pan with non-stick spray. Press the dough into the pan. You’ll want the crust about 1/8 inch thick.
  • Bake crust: Pierce the dough a couple times with a fork. Bake at 350°F for 8-10 minutes, until edges are lightly golden. Then let cool completely to prevent the icing from melting when added.
  • Add frosting first: Using a rubber spatula, spread an even layer of your chilled frosting over the cooled cookie dough crust.
  • Fruit topping: Now it’s time to top with your favorite fruit! It’s so fun to create unique designs and make it super pretty.

Decorating Variations

  • If you’re looking for a festive Memorial Day or 4th of July dessert, try turning this dessert into a flag. We’ve made this 4th of July fruit pizza many times and it’s so fun and celebratory. Makes the perfect patriotic dessert!
  • Make a sunrise design by using fresh oranges, strawberries and pineapple. Finish it off with some lemon zest for a refreshing taste. This would be great to serve at a brunch!
  • Shape into an oval shape for an Easter egg or make a rainbow shape.
  • Can also be turned into individual fruit pizza cookies or bars.

Expert Tips

  • Try adding toasted coconut for a tropical feel.
  • Add food coloring to the frosting to make it the desired color you want.
  • Drizzle with a yummy fruit glaze or honey for extra sweetness.
  • For a thicker frosting that’s more rich, omit the cool whip and make classic cream cheese frosting.
  • Double the recipe for a crowd and bake this pizza with fruit on a sheet pan.

What fruits go well on pizza?

That beautiful thing about dessert pizza is that you can customize it with your favorite fruits! I used berries, mandarin oranges, pineapple and kiwi but you could use sliced peaches, grapes and so many more choices.

Where does fruit pizza originate from?

While dishes similar to pizza with fruit date back to 6th century BC there is no official record of dessert pizzas topped with fruit in the United States until somewhere between World War II and the 1980’s. No matter where and when, I am glad this delicious dessert has become a summertime staple!

Should fruit pizza be refrigerated?

While it is best to serve within 24 hours of assembling it can be tightly covered and stored in the refrigerator for up to 3 days. The sugar cookie crust will begin to soften and the fruit won’t be as fresh, but it will still taste good.

Does a pizza with fruit get soggy?

It will only get soggy as it sits. I recommended serving this recipe for fruit pizza after assembling it to avoid any risk of sogginess.

Make Ahead and Storage

You can bake the crust and prepare the frosting ahead of time if preferred. Wrap the crust with plastic wrap to keep fresh and then store the frosting in an airtight container in the fridge. Then when ready to prepare, spread the frosting on top and add the diced fruit.

Once the frosting and fruit have been added your pizza should be stored in the refrigerator.

Ingredients

  • 4 ounces cream cheese , softened
  • 2 Tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • 8 ounces Cool Whip , softened
  • 1 (1-pound) package premade Pillsbury sugar cookie dough , can also use homemade cookie dough
  • 1 (15-ounce) can mandarin oranges
  • 2 kiwis
  • 1 pound strawberries
  • 1 pint raspberries
  • ½ pint blueberries
  • 1 (15-ounce) can pineapple , or use freshly cut pineapple

Instructions

  • Preheat the oven to 350°F and lightly grease a round glass pizza pan.

  • In a large bowl, whip together the cream cheese, sugar, and vanilla. Fold in Cool Whip. Chill until ready to use.

  • Press the dough into the pan, about 1/8 inch thick. Pierce several times with a fork.

  • Bake 10 to 15 minutes, or until edges are lightly golden. Let cool completely.

  • While the cookie is cooling, drain the fruit and set on paper towels to absorb excess juices.

  • Using a rubber spatula, spread an even layer of frosting over the cooled cookie dough crust. Arrange fruit in fun patterns. Keep chilled until ready to serve.

Notes

Cookie dough: I use premade sugar cookie dough for convenience, however homemade cookie dough works great too.

Make ahead:Prepare the cookie crust and frosting up to 1 day in advance. Store the cookie in an airtight container at room temperature and the frosting in an airtight container in the refrigerator. Frost and assemble the day of serving.

Substitutions: Feel free to substitute any of the fruit toppings with mango, blackberries, grapes, bananas and more.

Variations

Make a flag fruit pizza:

  1. Preheat oven to 350°F and spray a 9×13- or 15-inch rimmed baking sheet with nonstick spray.
  2. Press cookie dough into baking sheet, then pierce a couple times with a fork.
  3. Bake for 8-10 minutes, until edges are lightly golden. Let cool.
  4. Spread frosting on top and decorate with blueberries for the stars and strawberries for the stripes.

TIP:If you want to make the actual number of stars and stripes, you may want to try doubling the recipe and baking in a big sheet pan.

Storage: Keep leftovers stored in an airtight container in the fridge up to 3 days.

    quick question, I will be pressed for time when I make this tomorrow morning, will it still turn out if I bake the cookie tonight and prepare the rest in the am?

      I think that should be fine! Just cover the cooled crust once baked so that it stays soft and fresh :)
