This Mississippi pot roast in Ninja Foodi pressure cooker recipe is so easy, super quick and has only 5 ingredients! Just dump them in the pot, start and in only 60 minutes your kitchen will fill up with delicious smell. Melt in your mouth tender meat and yummy broth. You will love it!

Believe it or not, but i never tried the Mississippi pot roast before, not even in a slow cooker or dutch oven! I heard lots of good things about this recipe: how easy it is, ingredients are cheap and it makes even the toughest cut of beef tender.

But today we are going to cook this pretty roast in my new favorite kitchen gadget, the Ninja Foodi. No air fryer crisping today, just a pressure cooker button. Lets start.

How to make Mississippi pot roast

I like to call it a dump and start recipe, because that’s exactly what i am doing here. Just placing all the ingredients into my Ninja Foodi pressure cooker and push start.

There is another option of cooking Mississippi roast. You can brown the meat. Some people are doing it to bring more flavor to the meat, but as for me, its unnecessary. Unless you have extra time on hands, i usually don’t.

If you prefer to brown it, just place the beef roast in to the Foodi inner pot, add some oil and push saute function. Brown it for couple minutes on each side and then add other ingredients.

Lets see what other ingredients do we will need. Besides chuck roast you need to add Ranch Dressings packet, Au Jus gravy packet, butter, pepperoncinis, some chopped onion, garlic and beef broth.

You will also need to add half a cup of pepperoncini juice. It will help tenderize the meat. It may also add a little spice kick to your broth. The roast will have just a delicious flavor without being spicy. My kids proved at at the dinner time.

For the beef broth i used a beef bullion cube that i dissolved in warm water. It will be quicker to just add a canned or packaged beef broth but i didn’t have one on hand.

Chuck roast used in this Mississippi pot roast is a very common cut of meat used in such recipe. If you will go with a round top roast you will probably get similar results. But i prefer that fat marbling for juicier meat.

I used only a half of the stick of butter. My roast had enough fat in it and i didn’t want to go to wild with calories.

After you add all the ingredients in the Ninja Foodi inner pot, just close the lid, lock it, close the vent. Push on the PRESSURE button and set the timer. The 3 lb beef roast will be done in 60 minutes and will be melt-in-your-mouth tender. Add more pressure cooking time if you have a bigger roast. I would say, it will take about 1,5 hours for a 5 lb piece.

Serving suggestions

This recipe creates lots of juice and the best way to enjoy it is with a steaming bowl of white rice. Just pour the juice over the rice and add soft melting meat on top. Add chopped scallions or chives on top. Mashed potatoes are an amazing option too. The potato and meat combo is unbeatable for me.

How long does it last in the fridge

For us, Mississippi pot roast didn’t last until the next day. We ate it all withing an hour. But if you did not, just cover the Ninja Foodi inner pot with the lid (same size lid from your other pots will work) or a big plate. Keep in the fridge for up to 3 days. Reheat in the same pot using SAUTE button.

Ingredients

  • 3 lb beef chuck roast
  • ½ onion chopped
  • 3 cloves garlic chopped
  • 1 cup beef broth
  • 8 pepperoncini
  • ½ cup pepperoncini juice
  • 1 packet Au Jus powdered mix
  • 1 packet Ranch seasoning mix
  • 4 tablespoon unsalted butter (half a stick)

Instructions

  1. Add all the ingredients in to the inner pot of Ninja foodi*
  2. Close and lock the lid. Press Pressure button and set the timer to 60 minutes. Once cooked, release the pressure manually.
  3. Open the lid, watch for the steam. Shred the meat with two forks.
  4. Serve over white rice, mashed potatoes or noodles.

Notes

  • No need to brown the meat. It will be as flavorful and tender if you just pressure cook it as is.
  • If you forgot to release the pressure
    manually, don’t worry. It will not make much difference if the pressure
    will be released naturally (about 15 minutes).
  • Butter is optional
  • This recipe is Keto friendly, as long as its served with mashed cauliflower instead of mashed potatoes
