  4. Golden oyster
  5. Phoenix oyster
  6. King oyster mushrooms

They all have a great meaty texture like shiitake mushrooms and a delicate flavor, so they are perfect for vegetarians and you can use them in different ways. They go well in sandwiches, pastas and soups. You can even make mushroom steaks with these on a grill.

These mushrooms are easy to grow, so you can find them almost everywhere in the world. You need to check some particular trees like oak, maple, elm also known as hardwoods. The best time for wild oyster mushrooms is anytime from spring to fall.

Oyster mushroom has several other names such as Indian oyster, phoenix mushroom, lung oyster and its Latin name is pleurotus pulmonarius. No matter what they are named, oyster mushrooms have an irresistible flavor. This makes them waaaay tastier than white button mushrooms.

These mushrooms are one of those low-calorie foods with high nutrients. They are known as natural antioxidants, so good for body cells. Plus, these mushrooms have cholesterol lowering effects. We discovered grey oyster mushrooms a few years ago at our local grocery store. They are also called blue oyster mushrooms and are like flowers with their layers. This recipe has been one of our favorite side dishes since then.

Fresh Grey or Blue Oyster Mushrooms: We definitely need them fresh for this recipe, so don't try it with dried mushrooms. Grey or blue ones are almost the same. You can also use pink or yellow oyster mushrooms too. King oyster mushrooms can be cooked in the same way too.

Butter: We prefer butter because we love the flavor of it with mushrooms. But if you want a vegan recipe, you can definitely use olive oil or sesame oil instead.

Garlic: As in many recipes, garlic makes an amazing addition to the final flavor of the dish. We prefer them with their skin as it is better when frying the mushrooms in batches. We just crush them right before adding them into the hot pan.

Green onions: These are totally optional. You can use any herb you like. Parsley or thyme could be nice alternatives.

Spices: We want to keep it simple, so use only salt and pepper when frying them. And we sometimes sprinkle crushed chili pepper just when serving. You can use any spice you like with mushrooms.

How to Make

  1. First prepare oyster mushrooms: The first thing you should know about this step is that you shouldn't wash or rinse mushrooms. You just need to clean them with a slightly damp paper towel. If you wash the mushrooms under water, they release too much water when you cook them, which is not something desired. After cleaning them, cut them into bite size. You can either remove their thick rubbery stems or leave them.

  1. Fry the prepared oyster mushrooms in batches: To do this, melt butter (or heat oil) in a heavy skillet over medium-high heat. Place the mushroom pieces in the hot skillet in a single layer. Cook them until golden and flip them over.
  2. Add in the additional flavors: Add in crushed garlic cloves with their skin, chopped green onions, salt and pepper. Cook that side until golden too. Shake the skillet often and reduce the heat when it is needed until golden. Transfer them in a bowl and repeat the same steps for the remaining mushrooms.

Can I use king oyster mushrooms for this recipe?

Yes, you can. King oyster mushrooms are the largest species of oyster mushrooms, so you will probably need to fry them longer. Just check whether they are tender enough before removing them all from heat. You don’t need to cut the stems of these mushrooms, just trimming off the very end of their stem is enough.
The best thing about king oyster mushrooms is that they don’t lose their shape when cooked, so they have a nice and tempting look.

Can you eat oyster mushrooms raw?

Well, no. Raw mushrooms taste like nothing. Their amazing flavor comes out when cooked.

Can you freeze these mushrooms?

Yes, you can. It's better to freeze them after they are cooked. Cook them in boiling water for 2-3 minutes and then transfer them into a large bowl of cold water. Put in freezer bags to keep them in the freezer. You can use these frozen mushrooms in soups, scrambled eggs or rice pilaf.

Can they be dehydrated?

Yes, they can be dehydrated. Use a dehydrator for this and store them in jars when they are completely dry. When you want to use them, cook them in boiling water for a few minutes so that the mushrooms get tender. Almost all the flavor is in the broth now. Use it in soups or stews along with the mushrooms. You will see the flavor from dried mushrooms is much better than the fresh.

  • 1pound (450g) oyster mushrooms, layers divided or cut into large pieces
  • 2 tablespoons butter
  • 4 cloves garlic, crushed unpeeled
  • 2 green onions, chopped
  • Salt to taste
  • A pinch of black pepper

Instructions

  1. Prepare the mushrooms. Clean them with a slightly damp paper paper towel. Cut them in bite size. You can either remove their thick rubbery stems or leave them.
  2. Melt butter in a heavy skillet over medium-high heat. Place the mushroom pieces in the hot skillet in a single layer. Cook them until golden and flip them over.

  2. You can either remove the thick stems or leave them. We cook them both ways. The stems are rubbery and chewy, but we are not that bothered.
  3. Don't overload the pan. Fry the mushrooms in batches. Otherwise, they will be steamed.
  4. It's not a good idea to make them ahead of time. They lose their nice texture as they sit, so the best thing is to fry them right before serving.
